Soil (Terroir): Clay and limestone

Culture: Reasoned
Vines conducted in cordon de Royat – Green harvest, in order to eliminate the surplus of grapes – Yield of 35 hl / ha.

Grapes: 50% Grenache, 25% Cinsault, 15% Mourvedre, 10% Sauvignon.

Grape harvest times: Manuals, end of August / beginning of September, depending on maturity – Selective sorting with the pick and transport of the intact grapes in boxes.

Product Description

Winemaking: As soon as it arrives at the cellar, the grapes are distributed to a scrapper, which allows to separate the grape berries from the undesirable raffle. Then the grapes are cooled to a temperature of 10 ° and routed to pneumatic presses, which allow a soft and progressive pressing, preserving the aromatic finesse of our vintage. The wort is kept at low temperature. Fermentation takes place in thermoregulated tanks between 16 and 18 °. The finished wines are assembled, then filtered during the winter.

Tasting: At the same time fruity and mineral with a nice freshness, on very beautiful notes of peaches of vines and strawberries.

Food / wine pairing: Aperitif, salads, grills, Oriental and Mediterranean cuisine

Serve fresh: between 10 and 12 °C
